Utilizzando il raffreddamento ad acqua per tutti i rulli e l&#8217;intera superficie dell&#8217;omogeneizzatore, le temperature del caff\u00e8 rimangono sempre al di sotto dei 40\u00baC e gli oli e gli aromi volatili del caff\u00e8 vengono preservati all&#8217;interno del caff\u00e8. Inoltre, il raffreddamento ad acqua consente di produrre caff\u00e8 ultrafine 24 ore su 24, in modo costante e preciso.
